Time out. Let's talk briefly about matcha.

Matcha is whole green tea leaf, shaded before picking and ground to a fine powder — so you drink the leaf rather than steeping it and throwing it away. That's why the shading matters: it's what gives good matcha its colour and its roundness, and it's the difference between a cup that tastes sweet and one that tastes like a lawn. Ours is a single ingredient. Nothing added, nothing sweetened.

It's made for milk. If you drink your matcha as a latte — iced most of the year, hot when it's grim out — this is the one to keep in the cupboard.

Shaded for the weeks before picking, which is what makes matcha taste round rather than bitter. First harvest, from Uji.
